New Chef Brings Elevated Cuisine
to St. Pete Beach’s Waterfront

Castile Restaurant, the beautiful waterfront dining destination located in St. Pete Beach, announces Nicolas Lebas as its new Executive Chef and unveils new Mediterranean-inspired culinary menus. The French-born toque brings his signature Southern French influences and worldly experience to the Mediterranean restaurant for a worldly dining experience in St. Pete Beach’s cozy waterfront setting.

Born in Marseille, France, Nicolas Lebas has traveled the world, honing his skills and discovering new and unique flavors and techniques. With impressive stints in some of France’s exclusive restaurants, Lebas incorporates his expertise in authentic Southern French cooking style with classic Mediterranean cuisine into Castile’s menu, elevating the restaurant’s casually elegant Spanish Mediterranean cuisine.
Castile’s culinary menu offers a vast selection of delicate tapas and Spanish entrées, reflecting Lebas’ heavy French and Mediterranean influences. “I was born in Marseille, a port city in France, so I was exposed to the best ingredients and flavors of the South of France and Mediterranean from an early age,” says Lebas. “Castile showcases my love for the Mediterranean, with a great focus on the flavors and dishes found in the Iberian Peninsula of Spain and the South of France. Castile embodies the relaxed yet sophisticated spirits of the Mediterranean region and St. Pete Beach,” Lebas explains.

Lebas’ new dinner menu dives deeper into the Spanish art of tapas, with a great selection of Charcuterie and Cheese. Diners will snack on incredible charcuterie plates featuring traditional Spanish staple meats and cheeses such as Serrano ham, chorizo, lomo (pork tenderloin), speck, Manchego cheese, cabrales (Spanish blue cheese sauce). Seafood aficionados have their pick from the menu’s fresh Crudos offerings including Oyster Escabeche ($12), fresh Oysters by the half dozen ($18) or the dozen ($36), as well as Tuna Crudo ($13), with cucumber, baby fennel and tapenade. Other delectable tapas include Lebas’ signature Lamb Meatballs with couscous, eggplant sauce and feta and Remolacha Salad ($13) with petite Merlot, roasted beets, goat cheese and honey-lavender vinaigrette, and Asparagus Cappuccino served with Manchego foam and Kalamata olive salt. The delicious tapas menu is also available on the gorgeous 360° Rooftop, overlooking St. Pete Beach. Guests can enjoy a cocktail and a charcuterie plate or light tapas on the lounge’s plush couches, while taking in unrivaled views of the Gulf of Mexico, the Intracoastal Way and the legendary St. Pete sunset.

Lebas’s new entrée offerings include a variety of classic Spanish mains, including Castile’s take on the traditional paella, Paella Castile ($35), featuring shrimp, mussels, clams, snails, chorizo and salmorra, T.Toro Fish Stew ($32) with octopus, shrimp, scallop and branzino, Romesco Butter Sea Scallop ($32) served with black risotto, tomato jam and Xeres butter, and Beef Tenderloin with potato confit, charred cipollini and a Rioja reduction. SoFra offerings range from the traditional French Tuna of Provence ($31) to the succulent Branzino ($31) made with potato pave, fennel, pine nuts and herb sauce, and the Pork Tenderloin ($32) with chickpeas, caramelized apples, speck crisp and Manchego emulsion, among others.

The new menu is complemented by creative cocktail offerings, crafted by Castile’s Lead Bartender, Robby Rosello. Rosello’s selection of handcrafted cocktails range from refreshing libations with Spanish influence to new takes on classics including the traditional Sangria, the spicy Hot Pappy made with Herradura Silver, agave, cilantro and jalapeño; the new classic Castilian Gin & Tonic, Milagro Blanco Tequila, Ancho Reyes, dry vermouth and lime, and the Manzana Cidra, crafted with Amaretto Disaronno, Woodford Reserve and apple cider, among others. Rosello’s cocktail program is enhanced by a robust wine list including a wide variety of European wines such as Spanish, French and Italian varietals.
