Nueva Cantina has extended their talents from the kitchen to the streets with the launch of their newest endeavor- a food truck. That Mexican Place, as some may know it, is serving up everything from innovative Tacos, to classic Chips & Guacamole, to playful items, such as their finger-licking good Tachos (yes, Tachos! Tater Tot Nachos). Sheer Genius!

The launch of Nueva’s food truck was just a little over one short month ago on Valentine’s Day weekend. The idea for the truck from the crew at Nueva Cantina was simple- they saw other food trucks in motion at festivals, etc., and decided that they, too, wanted one.

One of the most intriguing aspects of the Nueva Cantina food truck is that it will be utilized as a test kitchen. The intent is to roll out new items with some frequency from the truck that could potentially land a regular spot on Nueva’s menu (at their restaurant and on their truck). Therefore, their menu from event-to-event will not likely remain exactly the same- which I find quite refreshing and appealing.

What sets the Nueva Cantina Food Truck experience apart is their ability to take a classic Mexican staple and turn it into something flashy and next-level using a combination of basic and unexpected ingredients in a sophisticated manner. There are already a wide variety of Mexican food joints every where you turn, and it is Nueva’s goal to continuously bring something new & original to the table with every dish from their kitchen.

Upon my visit to the Nueva Cantina Truck, I, of course, had to start with the Tachos. After one glorious bite, it was easy to see why this dish is among their most popular. Crispy Tater Tots loaded with Chorizo, Pico, Queso, Poblano Creme ( I could smother this deliciousness on everything!), Jalapeños & Queso Fresco…and they’re dreamy. This little number is an innovative play on classic nachos and has the whole nine: slight crunch and texture from the Tots, a crisp bite from the Pico, Creaminess and heat thanks to the Jalapeños, Poblano Creme and Queso and flavor from the Chorizo.

Next up, a trio of delectable Tacos: Short Rib, Mojo Pulled Pork, and Grilled Fish. I’m a flour Tortilla kind of gal, so I ordered mine on such; however, Corn Tortillas are also an option. These tacos are modest, but mighty, as each Tortilla comes piled-high with your meats + accompaniments of choice. Eating one of these babies is definitely a two-handed job.

Surprisingly (to me), the Grilled fish was my favorite of the three Tacos (though, all three were delightful). I love enjoying a dish comprised of a combination of both beautiful and fresh ingredients and that is precisely this Taco, to a “T.” The Fish is perfectly seasoned and its flavor does not get lost amongst the rest of the ingredients. A bit of spice is present, yet, not over powering and the Red Cabbage adds just the right amount of texture.

The Mojo Pulled Pork Taco seems simple, on the surface, but it possesses a thrill of spice and zest. Each bite provides a medley of flavors from the perfectly seasoned Pork, fiery Salsa Verde, fresh vibrance from the Cilantro, Lime and onion and the lightness of the Queso.

Short Rib, and Pico and Horseradish Creme, oh my! Everyone needs this Taco! The wow factor for me in this one was the Horseradish Creme- 100% unexpected, but 100% divine when paired with this melt-in-your-mouth Short Rib meat.

And I could not end a visit at “That Mexican Place” without enjoying some Guac, Queso and Salsa! Each dip has its own appetizing identity and the three of them together are undoubtedly a fit grouping. The Salsa brings the Fire, the Guac provides the fresh flavor and the Queso adds a mellow, creamy & gooey bite. Who’s to argue against any of that?
